坊さんはなぜ肉を食べない？

特に、出家して仏門に入り、ひたすら修行に励むのが精進であったが、後には単に肉食しないことが精進とされた。
出家した僧は肉食を禁じられていたからである。
それで、一切肉を使わぬ料理を「精進料理」と呼ぶようになった。

ところで、僧侶の肉食が禁じられているのは大乗仏教である。

インドやスリランカや東南アジアのお坊さんは現在でも肉食をする。
出家者は人々の布施で生活をするのだから、布施された食べ物はなんでも食べなければならない。
これは食べませんと辞退するのは布施をしてくれた人に失礼にあたる。

一説には、仏教の開祖の釈迦が最後に食べたのは豚肉料理だという。

しかしながら、肉食が無条件に許されていたわけではない。
その動物が殺される現場を見た肉は食べてはならない。
「あなたのためにこの動物を殺した」と聞いた肉は食べてはならない。
どうも、自分のために殺した動物と思われる肉は食べてはならない。
これを見・聞・疑の三肉は辞退するというもの。

我が国で僧侶の肉食を禁じたのは、奈良時代の天武天皇が仏教の慈悲の精神に基づいて殺生を禁断されたからである。
「牛・馬・犬・猿・鶏の宍（しし）を食うことなかれ」といった詔（みことのり）が675年に出された。

その後、701年の大宝律令の中に、「僧尼令」において、
僧尼 の一切の肉食が禁じられた。
この僧尼令の規則が明治維新まで日本の僧侶を拘束したのだ。
